What size wedding cake do we need for our wedding?

  This is the question I get asked a lot as I am sure you can imagine. I know that some cakemakers have a formula for working out how many portions are needed and hence what size cake a couple should have but that’s not something I am particularly keen to use and, I don’t know what it is anyway!   When discussing ideas and sizes with my couples I always suggest that they bear the following in mind: - ·         If you order a cake for 80 guests, then there is no way to make sure that each of your 80 guests all get a piece for cake. You can’t control what people eat unless it is served up to them, say at the sit-down meal. Nikki and Richard's Pretty Wedding Cake with Personalised Cake Topper

Nikki and Richard were married in 2017 at The Village Hotel, Maidstone.   Nikki chose a very pretty 3 tier wedding cake decorated with Cake Lace, pink and blue ribbon to match their theme and bridesmaids and finished with diamante to add a bit of glitz.   Nikki borrowed our pink pedestal cake stand which not only gave the cake extra height but matched their pink colour perfectly adding that extra bit of detail to their cake table.   The couple were very keen to have a personalised wedding cake topper that they could keep after the wedding. I made the topper using Renshaw Modelling paste so it would set hard and they would be able to keep it.   Richard is a fireman and wanted to be in his Fire Uniform, and Nikki in her wedding dress. White rose wedding cake

 White/ ivory cakes are not really my thing as I love a little bit of colour on a cake if nothing else. At wedding fairs I am often asked if I make "white" cakes so here was my homage to a white cake. It was really hard to design as I wanted to put bits of colour here and there, also there are some great wedding cake designers who specialise in tall Victorian cakes and I was very conscious of not copying anything they had done. I based this design on Victorian style wedding cakes with piping and delicate detailing. I used royal icing piping for the boarders and for the swags on the top and second tier. To create the lace effect I used Claire Bowman Cake Lace and decorated the other tiers with moulds by The Old Piping Bag. To make the cake a little different from my standard sugar flowers I used silk roses for between the tiers and on the top of the cake. First Birthday Cake with Ruffles

A client asked me to remake a cake that she had found on the Internet for her daughters 1st birthday and christening party. Sadly I cannot credit the original designer. The cake was a two tier, the bottom tier was made of pale pink ruffles, which give a fabulous look but are time consuming. The top tier was decorated with pale pink and gold dots and a gold painted number one! The gold paint we used was  Faye Cahill Shimmer Gold available from  Cake Stuff , this is 100% edible and for me is definitely the best edible gold on the market at the moment. The cake was collected and driven to London for the party. It was accompanied by pink and white buttercream cupcakes. The client provided her own topper.

My first wedding cake So this is me in August 1995 sporting a very dodgy hair do and looking like I could loose a few pounds, however this is a special picture because it's me with my very first wedding cake. I am looking pleased with myself as it's such a big accomplishment, my mum was with me and so proud too. By this point in time I had been making cakes as a hobby for about 2 years, I was under taking my City in Guilds in Sugarcraft and Design but I had never thought myself capable of making a wedding cake. I wanted to write about the mega road trip I took a couple of weekends ago to deliver two very beautiful cakes. It's complicated and there are so many factors involved that I have put it off as I am not sure how to explain it clearly, but I'll give it ago! Firstly the issues involved:- 1) Wedding cake booked at Salomons Estate, Tunbridge Wells approx 16 miles west of here and on a good run takes 36 minutes. 2) Gorgeous Blackhorse Inn book a wedding open day there 11-3 on the same day. I've been a recommended supplier there for a number of years so keen to take part. I can deliver the cake and get to the Blackhorse around 11.00 no problem. 3) One of my March 2019 brides has to reschedule her wedding and also does this for the same day. This wedding is at East Quay Whitstable, 31 miles east of me and on a good run takes 43 minutes. 4) Both weddings are at 1.30pm 5) Highways England decide to shut the M20 motorway between junctions 4-6 for the whole weekend to repla...
